Tasting Notes
Very pale straw with light green tinge. This Sauvignon Blanc has fragrant passion fruit and gooseberry aromas. A crisp, fresh wine with great citrus and tropical aromas finishing crisp and light with great natural acidity.
Technical Notes
Harvested at the cool of night before the extreme heat wave that occurred late in the ripening season. Crushed and chilled, the fruit is allowed skin contact in press for 3 to 4 hours for maximum flavour extraction. Cool fermentation in stainless steel tank to dryness 6 weeks on light lees with regular stirring several times a week cold settled and racked to bottling. Make to drink upon release while the fruit flavour is at its most fresh and vibrant but will cellar for short term.
