Tasting Notes

Impenetrable dark red with light red and purple hues around the edge. This wine is rich with sweet licorice and black berry fruit aromas with a hint of vanilla from well integrated oak. Finely structured wine with hints of cinnamon and chocolate nuances. The palate shows elegance and length with dark plum fruit and cashew, with a Smokey oak influence. There is a lot of complexity of flavors and mid palate richness. Would suit rich flavored meat dishes superbly as this is a truly grand example of Cabernet Sauvignon. For something a little different and of the same class as this great wine try Venison with sweet potato rosti.

Technical Notes

The grapes were destemmed without crushing, allowing fermentation with a percentage of whole berries, no sulphur was added prior to fermentation. The grapes were then fermented in open top tanks using inoculated yeast. Temperature and time on skins was critical, when the desired level of flavour and tannins were extracted from the skins, the wine was drained off into new hogshead barrels for ferment. Pressings were used in the blend then the wine went into American and French barrels for maturation, 9 months in American oak and 9 months in French oak for a total maturation period of 18 months.
