The bamboo steamer has been used in Asia for centuries and if you get one you'll understand why it hasn't gone out of fashion. Steaming is obviously much lower in calories than frying... and it's simple to use, too: just place it over or in a pot that has boiling water in the bottom of it.
Two tiers allow you to put, say, your veggies on one level and your chicken or prawns on another. After you're finished cooking, you can serve the meal right out of the steamer, which will give your table a certain international panache. Finally, as you can probably imagine, making one of these doesn't exactly create a big carbon footprint, so you can purchase it with a clear conscience.
