A Santoku knife from Global with a fluted edge. Like all Santoku knife this is used for fine slicing of meats and vegetables, the advantage is in the fluted edge. Air pockets created between the blade and food - stops vegetables and meat from "sticking" to the blade. Fine slicing requires much less effort with this style of blade. This is particularly noticeable when slicing the denser winter vegetables.

A perfectly balanced knife that will stay sharper for longer thanks to its 15 degree angled edge and sand filled handle. The Japanese knives are made in one piece from specially formulated stainless steel (Cromova 18) and it is thanks to this seamless construction that they stay hygienically clean for longer, as the smooth edge doesn't allow for any food trappings.
