Mystery Wines uses traditional methods when crafting the 2016 Yarra Valley Pinot Noir, which brings out a more earthy profile for the grapes. It's a mixture of 90% whole berry pressing and 10% whole bunch fermentation in open vessels. Allowing the flavours to naturally come together. Control over every step of the process, from handpicking and de-stemming to maturation results in an exceptionally well-made expression of the Noble grape. Note flavours of red berries and chocolate on the palate, with a distinctive aroma of earthiness and coffee. Serve with a mushroom ragout or grilled lamb.
