Tasting Notes
Straw with a lime green edge. Intense aromas of freshly cut lemon and lime with orange and whites peaches. Subtle hints of freshly picked lemon grass and grape fruit. The palate is finely structured with intense and citrus fruit flavours of tangelo, orange and desert lime, with passion fruit highlights. The wine has impressive length and a natural acid backbone, and has a mouth-wateringly finish. Will drink well now and over the medium term. The 2016 vintage in the Watervale sub region of the Clare Valley was perfect for the production of high quality Riesling. Vintage started a little earlier than normal when we felt the fruit had reached its optimum ripeness. The perfect conditions allowed for perfect flavour ripening whilst it was quite dry this enabled the development of the natural fruit acidity. After picking and crushing we used only the free run juice for our Riesling. Fermentation was over a couple of weeks – after cold stabilising/filtering, the wine was bottled to retain all those beautiful fruit flavours and natural grape acidity.
