"Two Thirds" refers to the alcohol, not the percentage of semillon (which is in fact 70%); the alcohol is in fact two-thirds that of a standard white wine. Fermentation was arrested by chilling and filtering the wine, but, given the barely off-dry nature of the wine, it seems that some of the alcohol was removed by means such as reverse osmosis or by other legal ways.'
