Tasting Notes
Light straw with green hues. An explosion of aromas with pristine fresh lemon blossom notes, delicious Granny Smith apple with traces of more complex hints of mandarin and lime. It’s juicy and vibrant on the palate almost crunchy texture, the mouth filling citrus notes are the hero with a lovely slate like minerality and crisp acidity all providing layer upon layer of character.
Technical Notes
Fruit was sourced from cool climate sites in the Eden Valley sub region of the Barossa. The grapes were crushed and destemmed prior to pressing and fermentation was brought on by select yeast strains. We selected stainless steel for ferment at cool temperatures to preserve the lifted aromatics of this wine, extended lees stirring creates a level of complexity not seen in most white wines.
