Tasting Notes:

Our Outback Jack Pinot Grigio is light, crisp and refreshing with tingly acidity. Displaying aromas of green apple and citrus, the palate presents flavours of lime, lemon and pear which combine on a fresh and zesty finish.

Technical Notes:

In the vineyard drought conditions provided warm and dry weather in the Riverina. Yields were a little low and some heavy rain before vintage affected some of the earlier varieties, with alcohols a little lower than expected. The Pinot Grigio was harvested during the first few days of February. Upon arrival at the winery, the fruit was crushed, destemmed and chilled to our bag presses. The pink juice then undergoes oxidative treatment to remove any bitter tannin and colour from the red skins. The juice is then fermented at temperatures of 14° – 16°C using a carefully selected yeast to optimise varietal expression. Finally, the wine is blended and filtered for bottling as soon as possible to retain freshness and crisp fruit flavours.
