**What is vacuum cooker?**By reducing the pressure inside the pot, the ingredients expand, and when returning to atmospheric pressure, the ingredients contract, allowing seasonings and flavorings to be drawn into the ingredients, resulting in an almost instant flavor infusion. Repeating the process of reducing pressure and releasing it enhances the infusion effect. Lowering the boiling point allows for the creation of a boiling state at lower temperatures. When it reaches a vacuum state, any air bubbles or moisture contained within the food are drawn out, creating a sponge-like texture. After leaving it in this state for a while, shifting the lid of the pressure cooker allows outside air to rush into the pot, releasing the vacuum pressure.

At this moment, the food, which has taken on a squeezed sponge-like texture, rapidly absorbs seasonings, broth, umami, and other flavors. As a result, it allows flavors to permeate quickly in a shorter time compared to using a pressure cooker or a heat-retention pot.
