My beloved Semillon, Grapes from the Deanery vineyard in Balhannah. Pressed directly to French oak where it ferments on full lees. The wine was left on these ferment lees until it was bottled 7 months after it was harvested. The wine shows apple blossom, lime juice and honey on the nose. The palate is bright and fresh and loves food (or not) the succulent acidity.

It is the perfect match to seafood and salads and also a wonderful tool to cut through creamy sauces and rich dishes.
