Tsa Tsai is an exceptional mustard variety hailing from Southwest China. People also refer to it as Sichuan or Szechuan vegetable due to its thick tuber-like extensions below the petioles - which are otherwise known as swollen stem mustard and pressed stem mustard. Its stems can span up to 10-15cm in diameter, weighing 200g! It is truly unlike any other vegetable out there!

As temperatures and day lengths rise, do not miss the opportunity to harvest your florets! Not only are they tender and delicious, but young leaves can also be used in soups, stir-fries, or pickled for a flavourful addition. Furthermore, here is an extra tip - why not try peeling and cooking the swollen stem base? It is commonly referred to as Zhacia or Cha Tsai (pickle with salt & chilli), which can add flavour to Asian dishes, fried rice or soup recipes.

Sow in spring & autumn at 3mm deep, 30cm apart. Germination in 7-14 days at 10-20oC. Maturity in 115-120 days.
