Tasting Notes

Deep dense crimson red. Vibrant and punchy aromas of cassis and licorice, evolving into darker aromas of choc-mint. The palate is full and generous, this is in a word voluptuous of Cabernet, it shows amazing level of restraint and cohesion between all the characters. The tannins are rustic and the wine shows hints of spice. Overall the palate is full and structured with abundant plum and black berry notes, which evolve into a well balance finish which highlight the fruit intensities ability to be molded with well integrated oak, tannin and acid.

Technical Notes

Fruit was sourced from premium vineyards in the Wrattonbully sub region of the Limestone Coast. The fruit was picked in the cool of night at optimum ripeness then fermented on skins in static potters and rotary fermenters for a period of seven days to retain as much of the luscious natural fruit acidity and flavour that Coonawarra wines are famous for. Following fermentation, pressing, clarification and final blending the fruit was matured with select parcels having contact with matured oak.
