Pepperjack is a producer based in the Barossa Valley in South Australia. It was established in 1996 by Barossa stalwart Saltram Wines as a way to showcase modern Barossa Shiraz and Cabernet Sauvignon wines at a reasonable price. It now makes a range of wines from these two varieties.

The wines are vinified in a similar way across both varieties. Grapes are brought separately to the winery where they are crushed, destemmed and fermented separately in stainless steel.

The wines are then pressed off, racked and aged in barrel for no less than 12 months, before being blended and bottled. Oak aging takes place in a mixture of French, American and Hungarian oak barrels.

Pepperjack's two original wines were a Cabernet Sauvignon and a Shiraz from the Barossa Valley, but the range has since been expanded to include a blended red wine made predominantly from Shiraz alongside Grenache, Cabernet Sauvignon, Merlot, Malbec, Sangiovese, Tempranillo and Cabernet Franc.

More recently, Pepperjack have created two Shiraz wines from Langhorne Creek and McLaren Vale specifcally to pair with steak.
