Tasting Notes
A deep cherry red. Highly perfumed with a complex bouquet of aromatic spice, liquorice, red, blue and black fruit balanced with a hint of charry French oak. Medium to full bodied, with red cherries and black bramble fruits featuring prominently. Hints of white pepper and Chinese 5 spice adding intrigue. A seamless, long finish of bright acidity, and savoury tannins built by whole bunch ferment and judicious use of oak.
Technical Notes
A warm dry growing season, followed by 60mm in January and one of the coolest February's on record resulted in small crop levels with a high concentration of flavour. As a single vineyard wine, this is an excellent showcase for the unique expression of Shiraz grown on our Polish Hill Rever Estate.
A combination of inoculated and spontaneous natural fermentation on skins for an average of 14 days in open vats. Gentle cap management using compressed air to protect aromatic qualities of the wine.
