TASTING NOTES
APPEARANCE Light white straw, green hue and brilliant clarity. AROMA White pepper spice, and pear fruits are complexed by nori and mineral flint. There is a focus and a depth to the nose, with barrel derived complexities and floral notes complementing the more primary fruit aromas. PALATE Nectarine and pear immediately wash across the palate. Ginger and fresh florals sing through and add length. The palate is generous and luscious but the healthy acidity maintains vitality and zest. A touch of saltiness on the finish. A great example of maritime Pinot Gris. FOOD MATCHING Salmon and cream cheese bagel; nori roll; three cheese souffle. VINIFICATION Hand harvested fruit was firmly whole bunch pressed to release the full Pinot Gris flavour profile. Natural ferment occurred in older French barrels. The wine was left to unwind and age slowly on its ferment lees to add generosity. After 8 months the wine was racked and filtered prior to bottling in September 2022. VINTAGE NOTES A wet winter and cool spring in Geelong set up the growing season. Small crops fully ripened with a mild summer, whilst retaining good acidity.
